Beef

Our beef comes from the pride of our farm, the pedigree herd of Lincoln Red Cattle.  We chose this breed not simply because there are the traditional herd of the county, but because the beef tastes well simply the best.

One of the oldest native breeds in the UK, Lincoln Reds have a lovely docile and placid temperment and excellent mothering skills making them a joy to handle.

Our cattle are reared in the traditional way. The herd lead a calm and contented life, feeding outside on grass in the Summer and on silage in the Winter, supplemented with concentrate only if they need it.

Allowing the herd to live as nature intended undoubtedly makes the beef taste so much better. A happy herd is a tasty herd! Go take a look at our cows if you like, free to roam they don't need hormones, antibiotics or feed additivies, just plenty of good fresh grass, water and sunshine.

We've been farming our beef this way for 20 years. We believe it is the right way to treat our livestock and it is the only way to rear a herd if you want the best tasting beef.

However not only does it taste good, it's actually good for you, Yes that's right GOOD for you. Grass fed beef is a fantastic source of CLA, omega 3's and vitamin E. In fact grass fed beef is the best source of CLA. So what is CLA?

"Natural CLA is one of the best good news stories to emerge for beef consumers and the beef industry in a long time. It's something that has always been a part of beef, but it's only recently that we've started to uncover its broad health potential. CLA appears to be one of those rare food components that can deliver health benefits beyond nutrition."

Dr. John Basarab, Alberta Agriculture and Rural Development

Grass fed beef also contains high levels of Omega 3's.  Fatty acids essential for normal growth and may play an important role in the prevention and treatment of coronary artery disease, hypertension, arthritis, cancer and other inflammatory and autoimmune disorders. The human body can't make these fats so you have to get them from your diet.

Grass-fed beef also has several times the amount of Vitamin E that concentrate fed beef has. In humans, vitamin E is linked with a lower risk of heart disease and cancer. This potent antioxidant may also have anti-aging properties, and most people tend to be deficient in vitamin E.

So you never need feel guilty about that steak again.

And there's still one last thing we do to make sure that our beef is the very best it can be. We hang all our beef for at least 21 days. This improves both flavour and texture, producing supremely tender meat. Most supermarkets don't bother with this step nowadays as it reduces the overall weight of a carcass, but when you want to produce the best, then hanging your beef is the only option.

And now it's over to you to cook it. Nick, our butcher, is on hand to advise you on cuts and cooking times, and I promise they'll be something suitable for all budgets, every occasion and each member of the family. Our beef is certainly versatile stews, casseroles, burgers, steaks  - it's brilliant in everything.

Our favourite?  - a Sunday roast, of course!
